- 1.5 cups sharp cheddar, freshly grated
- ¾ cup dried cranberries, finely chopped

- ¼ tsp kosher salt
- ¾ cup pecans, toasted and finely chopped, for ‘cap’
- ½ cup crushed buttery crackers or blanched almonds, for ‘body’
- 1 pretzel stick, for the stem
- 1 tsp honey or finely minced rosemary (optional)
Instructions
- Toast the pecans in a dry skillet over medium heat for 4-5 minutes until fragrant. Let them cool completely.
- In a mixing bowl, beat softened cream cheese until smooth. Add in grated sharp cheddar, chopped cranberries, Dijon mustard, Worcestershire sauce, garlic powder, black pepper, and salt. Mix well.
- Transfer the mixture onto plastic wrap and shape it into an oval with a slightly pointed end to resemble an acorn. Chill for 15 minutes to firm up.
- Roll the top third of the cheeseball in the chopped pecans to create the ‘cap.’ Roll the remaining bottom two-thirds in crushed crackers or almonds for contrast.
- Insert a pretzel stick into the top for the stem.
- Refrigerate the cheeseball for 30 minutes to 2 hours to set. Serve with crackers, apple slices, or celery sticks.
