Description

A quick and flavorful Summer Sausage Skillet with Andouille Sausage. This easy one-pan meal is packed with smoky, spicy goodness, perfect for busy weeknights!


Ingredients

  • Summer sausage
  • Andouille sausage
  • Bell peppers (red and green)
  • Onion
  • Garlic
  • Olive oil
  • Cajun seasoning
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. Heat a large skillet over medium-high heat and add olive oil.
  2. Slice summer sausage and andouille sausage into thin rounds, and chop bell peppers, onion, and garlic.
  3. Add the sliced sausages to the skillet and cook for 5-7 minutes, browning on both sides.
  4. Add the chopped onions, bell peppers, and garlic. Stir everything together and cook for 4-5 minutes, letting the vegetables soften.
  5. Season with Cajun seasoning, salt, and pepper. Stir well to coat.
  6. Let it cook for another 5-7 minutes until the sausages are sizzling and the vegetables are tender.
  7. Remove from heat and garnish with fresh parsley before serving.

Notes

  • Substitute Andouille sausage with smoked sausage or chicken sausage for a lighter version.
  • If the vegetables overcook, lower the heat and add a splash of water or broth to soften them without burning.
  • For more heat, add extra Cajun seasoning or cayenne pepper to taste.
