Ingredients
- Summer sausage
- Andouille sausage
- Bell peppers (red and green)
- Onion
- Garlic
- Olive oil
- Cajun seasoning
- Salt and pepper
- Fresh parsley for garnish
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
- Slice summer sausage and andouille sausage into thin rounds, and chop bell peppers, onion, and garlic.
- Add the sliced sausages to the skillet and cook for 5-7 minutes, browning on both sides.
- Add the chopped onions, bell peppers, and garlic. Stir everything together and cook for 4-5 minutes, letting the vegetables soften.
- Season with Cajun seasoning, salt, and pepper. Stir well to coat.
- Let it cook for another 5-7 minutes until the sausages are sizzling and the vegetables are tender.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- Substitute Andouille sausage with smoked sausage or chicken sausage for a lighter version.
- If the vegetables overcook, lower the heat and add a splash of water or broth to soften them without burning.
- For more heat, add extra Cajun seasoning or cayenne pepper to taste.
- To check if the sausages are fully cooked, cut one open to ensure there’s no pink inside.
