Description

Antipasto skewers are a delicious, easy-to-make appetizer that combines cheese, meats, vegetables, and tortellini into a bite-sized treat. Perfect for parties, picnics, or casual snacking, these skewers offer the best flavors of a traditional antipasto platter in a fun, customizable form.


Ingredients

  • 1 cup tortellini (cooked and cooled)
  • 12 mozzarella balls (small)
  • 1/2 cup salami (sliced)
  • 1/4 cup Kalamata olives
  • 1/4 cup green olives
  • 10 cherry tomatoes
  • 1/2 cup roasted red peppers (sliced)
  • 1/4 cup fresh basil leaves
  • Olive oil for drizzling
  • Balsamic glaze (optional)

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside to cool.
  2. Gather the mozzarella balls, salami, olives, cherry tomatoes, roasted red peppers, and fresh basil leaves.
  3. Begin threading the tortellini onto each skewer, followed by a mozzarella ball, a slice of salami, an olive, a cherry tomato, and a roasted red pepper. Repeat until the skewer is full.
  4. Top each skewer with a fresh basil leaf and drizzle with olive oil or balsamic glaze for extra flavor.
  5. Refrigerate for 20-30 minutes before serving for the best flavor and texture.

Notes

  • For a gluten-free version, replace the tortellini with gluten-free pasta or skip it altogether.
  • For a vegetarian alternative, swap the salami for marinated artichokes or more veggies like zucchini or mushrooms.
  • If you prefer a spicier version, add pepperoncini or drizzle with hot sauce.
