Ingredients
Scale
- 1 cup tortellini (cooked and cooled)
- 12 mozzarella balls (small)
- 1/2 cup salami (sliced)
- 1/4 cup Kalamata olives
- 1/4 cup green olives
- 10 cherry tomatoes
- 1/2 cup roasted red peppers (sliced)
- 1/4 cup fresh basil leaves
- Olive oil for drizzling
- Balsamic glaze (optional)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside to cool.
- Gather the mozzarella balls, salami, olives, cherry tomatoes, roasted red peppers, and fresh basil leaves.
- Begin threading the tortellini onto each skewer, followed by a mozzarella ball, a slice of salami, an olive, a cherry tomato, and a roasted red pepper. Repeat until the skewer is full.
- Top each skewer with a fresh basil leaf and drizzle with olive oil or balsamic glaze for extra flavor.
- Refrigerate for 20-30 minutes before serving for the best flavor and texture.
Notes
- For a gluten-free version, replace the tortellini with gluten-free pasta or skip it altogether.
- For a vegetarian alternative, swap the salami for marinated artichokes or more veggies like zucchini or mushrooms.
- If you prefer a spicier version, add pepperoncini or drizzle with hot sauce.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
