Description

This Avocado Cucumber Salad is a quick, healthy, and refreshing dish that combines creamy avocado, crisp cucumbers, and a zesty lime dressing. With minimal ingredients and easy steps, it’s a perfect side dish for any occasion.

Ingredients

Scale
  • 2 English cucumbers, sliced
  • 1 large avocado, pitted, peeled, and sliced
  • 1/3 cup green onion, chopped
  • 2 Tbsp lime juice
  • 2 Tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/8 tsp black pepper

Instructions

  1. Slice the cucumbers into thin rounds.
  2. Cut the avocado in half, remove the pit, scoop out the flesh, and slice it.
  3. In a large bowl, combine the cucumbers, avocado, and chopped green onions.
  4. Drizzle with lime juice and olive oil.
  5. Season with sea salt and black pepper to taste.
  6. Toss gently to coat the ingredients evenly. Serve immediately or store in the refrigerator for a few hours.

Notes

  • To prevent avocado browning, squeeze lime juice over the avocado and cover the salad tightly with plastic wrap before storing.
  • Salt the cucumbers just before serving to avoid them becoming too watery.
  • You can swap green onions for cilantro or red onion for a different flavor profile.
