Ingredients
Scale
- 2 ripe avocados
- 1/2 cup feta cheese, crumbled
- 1 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro or parsley, chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 small garlic clove, minced
- Salt, to taste
- Pepper, to taste
Instructions
- Cut and scoop the avocado into a large mixing bowl. Mash until smooth, leaving it a bit chunky for texture.
- Crumble the feta cheese and add it to the mashed avocado. Stir gently to combine.
- Stir in the diced tomatoes, red onion, and fresh herbs (cilantro or parsley).
- Drizzle with olive oil and squeeze in the fresh lemon juice. Stir well.
- Add minced garlic, salt, and pepper to taste. Mix until evenly combined.
- Transfer to a serving bowl and garnish with extra herbs or feta, if desired. Serve with chips, crackers, or fresh veggie sticks.
Notes
- If preparing ahead, cover the dip tightly with plastic wrap to prevent browning.
- For extra flavor, add chopped jalapeños or chili flakes for a spicy kick.
- Store leftovers in an airtight container for up to 2 days in the refrigerator.
- For a dairy-free version, substitute feta with a vegan cheese alternative.
