A comforting and beginner-friendly breakfast casserole made with crispy tater tots, savory bacon, fluffy eggs, and melted cheese—perfect for brunch or a make-ahead morning meal.
Ingredients
Scale
- 1 (32 oz) bag frozen tater tots
- 8 slices bacon, cooked and crumbled
- 8 large eggs
- 1 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dry mustard (optional)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack or pepper jack cheese
- 1/4 cup green onions, chopped (optional)
- Butter or nonstick spray for greasing
Instructions
- Preheat your oven to 350°F and grease a 9×13-inch baking dish with butter or nonstick spray.
- Arrange the frozen tater tots in a single, even layer across the bottom of the dish.
- In a large bowl, whisk together the eggs, whole milk, salt, black pepper, and dry mustard (if using) until smooth.
- Sprinkle the cooked, crumbled bacon evenly over the tater tots.
- Spread the shredded cheddar and Monterey Jack cheese over the bacon layer.
- Carefully pour the egg mixture over all the layers, allowing it to fill in between the ingredients.
- Top with chopped green onions if using.
- Bake uncovered for 40–45 minutes, or until the eggs are set and the top is golden brown.
- Let the casserole rest for 5–10 minutes before slicing and serving.
Notes
- If the top browns too quickly, cover loosely with foil while baking.
- To keep tater tots crispy, bake them for 10 minutes before assembling the casserole.
- Store leftovers in an airtight container for up to 4 days.
- Reheat in the oven or air fryer to maintain crispiness.
