Description

A comforting and beginner-friendly breakfast casserole made with crispy tater tots, savory bacon, fluffy eggs, and melted cheese—perfect for brunch or a make-ahead morning meal.

Ingredients

Scale
  • 1 (32 oz) bag frozen tater tots
  • 8 slices bacon, cooked and crumbled
  • 8 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or pepper jack cheese
  • 1/4 cup green onions, chopped (optional)
  • Butter or nonstick spray for greasing

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Arrange the frozen tater tots in a single, even layer across the bottom of the dish.
  3. In a large bowl, whisk together the eggs, whole milk, salt, black pepper, and dry mustard (if using) until smooth.
  4. Sprinkle the cooked, crumbled bacon evenly over the tater tots.
  5. Spread the shredded cheddar and Monterey Jack cheese over the bacon layer.
  6. Carefully pour the egg mixture over all the layers, allowing it to fill in between the ingredients.
  7. Top with chopped green onions if using.
  8. Bake uncovered for 40–45 minutes, or until the eggs are set and the top is golden brown.
  9. Let the casserole rest for 5–10 minutes before slicing and serving.

Notes

  • If the top browns too quickly, cover loosely with foil while baking.
  • To keep tater tots crispy, bake them for 10 minutes before assembling the casserole.
  • Store leftovers in an airtight container for up to 4 days.
  • Reheat in the oven or air fryer to maintain crispiness.
