Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
- Season the chicken breasts on both sides with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium heat. Add the chicken breasts and sear for 2–3 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds. Pour in the chicken broth and simmer for 1-2 minutes to reduce slightly.
- Add softened cream cheese to the skillet and stir until smooth. Add fresh chives and season with salt and pepper to taste.
- Place the seared chicken breasts in the prepared baking dish and pour the cream cheese sauce over them, ensuring they are well coated. Optionally, sprinkle shredded cheddar cheese on top.
- Bake uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Broil for 2-3 minutes at the end for a golden, cheesy top.
