Description

Blackberry Cobbler is a warm, comforting fruit dessert made with juicy blackberries baked beneath a buttery, golden cobbler topping that tastes like a cross between a sugar cookie and a soft biscuit. Perfect for summer gatherings or cozy family desserts, this easy homemade cobbler pairs beautifully with vanilla ice cream.

Ingredients

Scale
  • 6 cups fresh blackberries
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon finely grated lemon zest (from 1 small lemon)
  • 3 tablespoons all-purpose flour (for filling)
  • 2/3 cup granulated sugar (for topping)
  • 3/4 cup all-purpose flour (for topping)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 teaspoon pure vanilla extract
  • 6 tablespoons unsalted butter, melted
  • 1 scoop vanilla ice cream per serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, gently mix the blackberries, granulated sugar, lemon juice, lemon zest, and flour until evenly combined.
  3. Transfer the blackberry mixture into the prepared baking dish and spread evenly.
  4. In a separate bowl, combine sugar, flour, baking powder, and salt for the topping.
  5. Add melted butter and vanilla extract to the topping mixture and stir until a thick, crumbly dough forms.
  6. Pinch and flatten pieces of the topping dough and scatter them evenly over the blackberry mixture.
  7. Bake for 30 to 35 minutes, or until the berries are bubbling and the topping turns light golden brown.
  8. Remove from the oven and let the cobbler cool for 10 to 15 minutes so the juices can thicken.
  9. Serve warm on its own or topped with vanilla ice cream.

Notes

  • Fresh blackberries are recommended because they hold their shape better than frozen berries.
  • If using frozen blackberries, thaw and drain them first to reduce excess liquid.
  • If berries are very tart, reduce lemon juice and add an extra tablespoon of sugar.
  • Let the cobbler rest before serving to allow the filling to thicken.
  • Store leftovers covered in the refrigerator for up to 2 days and reheat before serving.
  • For variation, replace some blackberries with raspberries or blueberries.
