  • 3/4 cup all purpose flour
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter, melted

  • 2 8oz packages cream cheese
  • 1/2 cup granulated sugar
  • 1 1/2 tablespoon all purpose flour
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 1/2 cups fresh blueberries
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons granulated sugar
  • 2 tablespoons all purpose flour
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch or 9×9 inch baking pan with parchment paper.
  2. In a medium-sized bowl, combine old fashioned rolled oats, flour, ground cinnamon, salt, brown sugar, and melted butter. Mix until well combined and crumbly.
  3. Press half of the oat mixture into the prepared baking pan to form an even crust.
  4. In a large bowl, beat softened cream cheese until smooth. Add granulated sugar, flour, vanilla extract, and egg. Beat until smooth and combined, then spread evenly over the crust.
  5. In a medium bowl, toss fresh blueberries with lemon juice, granulated sugar, flour, and cornstarch. Stir gently to combine, then sprinkle the blueberry mixture evenly over the cheesecake layer.
  6. Sprinkle the remaining oat mixture over the blueberries to cover them completely.
  7. Bake for 55-60 minutes or until the topping is golden brown and the center is slightly jiggly.
  8. Allow the bars to cool completely in the pan at room temperature for about 2 hours. Transfer to the fridge for at least 4 hours before cutting into squares.

Notes

  • Ensure that the cream cheese is softened to room temperature for easy mixing.
  • Do not overbeat the cheesecake filling, as it can incorporate too much air and result in a texture with holes.
  • Use old fashioned rolled oats for the best texture. Quick oats will not give the same crunchy effect.
  • If using frozen blueberries, thaw them completely and drain any excess liquid before adding them to the filling.
