Description

Ingredients

  • Graham cracker crumbs – 2 cups
  • Unsalted butter, melted – 1/2 cup
  • Cream cheese, softened – 24 oz
  • Granulated sugar – 1 cup
  • Eggs – 3 large
  • Vanilla extract – 2 teaspoons
  • Sour cream – 3/4 cup
  • Fresh or frozen blueberries – 2 cups
  • All-purpose flour – 3 tablespoons
  • Brown sugar – 1/2 cup
  • Rolled oats – 1/2 cup
  • Cold butter, cubed – 1/3 cup

Instructions

  1. Preheat the oven to 325°F (165°C). Mix graham cracker crumbs with melted butter and press firmly into the bottom of a springform pan.
  2. Bake the crust for 10 minutes, then remove from the oven and let it cool slightly.
  3. Beat the cream cheese until smooth, then add sugar and mix until creamy. Add eggs one at a time, followed by vanilla extract and sour cream.
  4. Pour the cheesecake filling over the cooled crust and smooth the top evenly.
  5. In a saucepan, cook blueberries with flour and a small amount of sugar until thickened. Spoon the blueberry mixture evenly over the cheesecake filling.
  6. In a bowl, combine flour, oats, brown sugar, and cold butter until a crumbly texture forms. Sprinkle the crumble evenly over the blueberries.
  7. Bake for 55–65 minutes, until the edges are set and the center slightly jiggles.
  8. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.

  • Do not overbake to avoid a dry cheesecake texture.
