Description

  • 2 pints cherry or grape tomatoes
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon dried basil or Italian seasoning
  • 2 (5.2-ounce) packages Garlic & Herb Boursin cheese
  • 1 pound rotini pasta (or preferred pasta shape)
  • ½ cup reserved pasta water
  • Parmesan cheese, for serving

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and prepare a 9×13-inch baking dish by adding the cherry or grape tomatoes.
  2. Season the tomatoes: Drizzle olive oil over the tomatoes and toss them with minced garlic, garlic powder, crushed red pepper flakes, and dried basil until evenly coated.
  3. Add the Boursin cheese: Place the rounds of Boursin cheese in the center of the baking dish, nestled among the seasoned tomatoes.
  4. Bake until softened: Transfer the dish to the oven and bake uncovered for 30 to 35 minutes, or until the tomatoes are blistered and the cheese is soft.
  5. Cook the pasta: While the cheese and tomatoes bake, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve ½ cup of pasta water.
  6. Mash and mix: Once the tomatoes are done baking, remove the dish from the oven. Use a spoon to mash the tomatoes and mix them with the softened Boursin cheese until a creamy sauce forms.
  7. Combine with pasta: Add the drained pasta directly into the baking dish. Pour in a splash of reserved pasta water and stir everything together until well combined and evenly coated. Add more pasta water if needed for a smoother consistency.
  8. Garnish and serve: Sprinkle freshly grated Parmesan cheese on top and serve immediately while warm.

Notes

  • To add protein, mix in cooked shredded chicken, shrimp, or crispy bacon when combining the pasta with the sauce.
  • If the sauce is too thick, add more pasta water or a splash of milk to achieve a silkier texture.
  • Fresh basil or parsley can be added at the end for a pop of freshness.
