Description

Broccoli Cheese Casserole is a creamy, cheesy comfort food that’s perfect for any meal. It combines tender broccoli with a rich, cheesy sauce and a crispy Ritz cracker topping, making it a family favorite that’s easy to prepare and packed with flavor.


Ingredients

  • 4 cups chopped broccoli
  • 1 (10 ounce) can of cream of chicken soup
  • 1 cup mayonnaise or Miracle Whip (can substitute Greek yogurt or sour cream)
  • 1/4 cup melted butter (1/2 stick)
  • 2 large eggs, slightly beaten
  • 1/2 medium yellow onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups extra sharp cheddar cheese
  • 1/2 sleeve of Ritz crackers, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Steam the broccoli until tender but not too soft, about 5 minutes.
  3. Chop the steamed broccoli into bite-sized pieces and place in a medium-sized mixing bowl.
  4. Add the cream of chicken soup, mayonnaise, melted butter, eggs, finely chopped onion, salt, and pepper to the bowl. Mix until well combined.
  5. Stir in 3/4 cup of the sharp cheddar cheese and mix well.
  6. Spray an 8×8-inch casserole dish with cooking spray and pour the broccoli mixture into the dish.
  7. Top the casserole with the remaining 3/4 cup of cheddar cheese and crushed Ritz crackers.
  8. Bake for 30 minutes, or until the cheese is melted and the top is golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • For a variation, you can add diced mushrooms, cooked chicken, or cauliflower.
  • If using frozen broccoli, thaw and drain it well to avoid excess water.
  • Make this dish ahead of time by assembling it and storing it in the refrigerator for up to 4 days before baking.
  • To freeze, assemble the casserole without the cracker topping and freeze for up to 3 months.
