  • 1 1/4 pounds petite carrots (or regular carrots, cut in half)
  • 3 tablespoons butter
  • 2 tablespoons honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 1/2 teaspoon fresh thyme (or 1/4 teaspoon dried)
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a baking sheet with nonstick cooking spray and arrange the carrots on top.
  2. In a small stainless steel saucepan, melt the butter over low heat. Stir constantly until the butter turns golden brown and develops a nutty aroma, about 5-10 minutes. Remove from heat.
  3. Add the honey, garlic powder, salt, pepper, and thyme to the brown butter, stirring to combine.
  4. Drizzle the brown butter mixture over the carrots, tossing to coat evenly.
  5. Roast the carrots in the oven for 25-40 minutes, flipping them halfway through, until fork-tender and caramelized.
  6. Once done, garnish with chopped parsley and serve warm.

  • Regular carrots can be used, but cut them in half to ensure even roasting.
  • If you prefer a different sweetness, maple syrup can be used in place of honey.
  • Brown butter requires constant stirring to avoid burning, so keep an eye on it!
