Description

A sweet and spicy Cajun Honey Chicken Bowl made with tender chicken simmered in a flavorful glaze, perfect for quick and healthy beginner-friendly meals.


Ingredients

  • 2 pounds boneless skinless chicken breasts, chopped into pieces
  • 1 red bell pepper, seeded and chopped
  • 1 jalapeño pepper, seeded and chopped
  • Orange pieces, cut in half
  • Lime wedges for garnish (optional)
  • 2 green onions, chopped for garnish (optional)
  • Fresh parsley, minced for garnish (optional)
  • 1/3 cup honey
  • 1/3 cup fresh orange juice
  • 2 teaspoons brown sugar
  • 3 tablespoons rough Dijon mustard
  • 1 tablespoon yellow mustard
  • 3/4 tablespoon Cajun seasoning
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Trim excess fat from the chicken breasts and slice them into tender-sized pieces.
  2. In a zip-top bag, combine honey, orange juice, brown sugar, Dijon mustard, yellow mustard, Cajun seasoning, garlic, salt, and pepper. Mix well, then add the chicken and seal the bag. Massage to coat and refrigerate for up to 8 hours.
  3. Pour the entire contents of the bag into a large skillet over medium-high heat until it begins to bubble.
  4. Reduce the heat to medium-low and let simmer uncovered for 25–30 minutes, stirring occasionally until the liquid reduces to a glaze.
  5. During the last 5 minutes of cooking, add chopped bell pepper, jalapeño, and orange pieces to the skillet.
  6. Remove the chicken and vegetables and serve over rice, quinoa, or greens. Garnish with green onions, parsley, and a lime wedge if desired.

Notes

  • If the glaze is too runny, simmer a few minutes longer until it thickens.
  • Use a meat thermometer to ensure the chicken reaches 165°F.
  • Skip jalapeños for a milder version or add more Cajun seasoning for extra heat.
  • You can prep the marinade and veggies a day in advance for quicker cooking.
