Ingredients

  • 1 pound lean or medium ground beef (10–20% fat)
  • 1 medium onion, finely chopped
  • 2 teaspoons olive oil
  • 2 tablespoons mayonnaise
  • 2 tablespoons BBQ sauce or ketchup
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 12 Hawaiian rolls (1 package)
  • 8 slices cheddar cheese or 68 oz shredded cheese
  • 1 tablespoon soft butter (for pan)
  • 2 tablespoons butter (for glaze)
  • 2 teaspoons Dijon mustard
  • 1 tablespoon brown sugar (or maple syrup)
  • 2 teaspoons sesame seeds or Everything Bagel Seasoning

Instructions

  1. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper or foil. For crispy bottoms, butter the pan lightly.
  2. Heat olive oil in a skillet over medium heat. Add chopped onions and sauté for 5–6 minutes until golden.
  3. Add ground beef and cook, breaking it up, until no longer pink (about 3 minutes). Drain excess grease carefully.
  4. Stir in mayonnaise, BBQ sauce, garlic powder, salt, and pepper. Taste and adjust seasoning as needed.
  5. Slice the Hawaiian rolls horizontally as a connected slab. Place the bottom half on the pan and layer with half the cheese, the beef mixture, and the remaining cheese. Cover with the top half of the rolls.
  6. Microwave butter, Dijon mustard, and brown sugar for 25 seconds. Stir and brush over the tops of the rolls. Sprinkle with sesame seeds.
  7. Bake uncovered for 12–15 minutes until golden and the cheese is melted. Cut into individual sliders and serve immediately.

  • Drain grease well to prevent soggy sliders.
  • Cheese on both top and bottom helps hold everything together and adds flavor.
