- 1 tablespoon olive oil
- 1 medium onion, chopped small
- 3 sticks celery, chopped small
- 3 medium carrots, peeled & sliced thin
- 3 cloves garlic, minced
- 6 uncooked chicken thighs (boneless, skinless)
- 8 cups chicken broth (two 32 oz cartons)
- 1/2 teaspoon Italian seasoning
- 1 cup long grain white rice (e.g., jasmine)
- Salt & pepper to taste
- 1–2 tablespoons fresh parsley, chopped (optional)
Instructions
- Prepare the onion, celery, and carrots. Mince the garlic.
- In a large soup pot, heat olive oil over medium-high heat. Add the onion and celery and sauté for about 5 minutes.
- Stir in the garlic and cook for another 30 seconds.
- Add the chicken thighs, sliced carrots, chicken broth, Italian seasoning, and rice. Bring to a boil.
- Once boiling, reduce heat and let the soup simmer for 15-20 minutes, or until the chicken is cooked through, the rice is tender, and the vegetables have softened.
- Remove the chicken from the pot, shred it, and return it to the soup.
- Season the soup with salt and pepper to taste, then stir in fresh parsley if desired. Serve and enjoy!
Notes
- If you prefer less mushy rice, reduce the cooking time or cook the rice separately and add it to the soup before serving.
- You can freeze the soup without the rice for up to 3 months. Reheat and add fresh rice when ready to serve.
- For a spicier version, add crushed red pepper flakes or hot sauce during cooking.
- For a lemony twist, add fresh lemon juice just before serving.
