Ingredients

  • 8 oz chow mein noodles
  • 1 lb chicken breast or thighs, thinly sliced
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 small onion, sliced
  • 1 cup shredded carrots
  • 2 cups shredded cabbage or bok choy
  • 1/2 cup bean sprouts (optional)
  • 2 green onions, sliced
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce (optional)
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1 tsp brown sugar
  • 1/4 cup water or chicken broth

Instructions

  1. Cook the chow mein noodles according to package instructions, drain, rinse under cold water, and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, cornstarch, brown sugar, and water or broth to make the chow mein sauce.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add sliced chicken and cook for 5–6 minutes until browned and fully cooked. Remove from the pan and set aside.
  4. In the same pan, add the remaining oil, then sauté garlic and onion for 1 minute. Add carrots, cabbage, and bean sprouts (if using), stir-frying for 2–3 minutes until tender-crisp.
  5. Return the chicken to the pan, add the cooked noodles, and pour the sauce over everything. Toss well to combine and heat through until evenly coated.
  6. Garnish with sliced green onions and serve immediately.

  • Substitute chicken with shrimp, beef, or tofu for variety.
  • Do not overcook the noodles to avoid mushiness.
