Instructions

  1. Preheat and Prepare the Pan: Preheat your oven to 350°F and lightly coat a 9×13-inch baking dish with nonstick cooking spray to ensure easy cleanup.
  2. Mix the Ingredients: In a large mixing bowl, combine shredded chicken, uncooked instant rice, cream of chicken soup, sour cream, frozen onion and bell pepper blend, undrained diced tomatoes with chilies, chicken broth, fajita seasoning, and half of the shredded cheese. Stir well until all ingredients are evenly distributed.
  3. Assemble the Casserole: Transfer the mixture into the prepared baking dish and spread it evenly using a spatula to ensure consistent cooking.
  4. Bake the Casserole: Cover the dish tightly with aluminum foil and place it in the preheated oven. Bake for 35 to 45 minutes, or until the rice is fully cooked and tender. You can check doneness by tasting a small spoonful from the center.
