Description

Chicken Lo Mein is a quick and easy homemade dish that combines tender chicken, crisp vegetables, and soft noodles tossed in a savory sauce. It’s a healthier, flavorful alternative to takeout, perfect for busy weeknights or family meals.


Ingredients

  • 1 lb chicken breast, sliced into strips
  • 8 oz lo mein noodles, cooked according to package instructions
  • 1 tbsp sesame oil
  • 2 tbsp olive oil or avocado oil
  • 2 large carrots, sliced
  • 1 large onion, sliced
  • 2 cups broccoli florets
  • 4 garlic cloves, minced
  • 1/3 cup chicken broth
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tsp sesame oil

Instructions

  1. Whisk the chicken broth, soy sauce, brown sugar, and sesame oil together in a bowl and set aside.
  2. Slice the carrots, onion, and broccoli into bite-sized pieces. Slice the chicken into thin strips.
  3. Heat a wok or large skillet over medium-high heat and add sesame oil. Cook the chicken until golden brown. Remove and set aside.
  4. In the same pan, add a bit more oil and sauté the onions in the leftover chicken drippings until golden brown. Remove and set aside.
  5. Add the carrots to the pan and cook until softened, then add the broccoli and cook for 2 more minutes. Add the garlic and stir to combine.
  6. Return the cooked chicken and onions to the pan. Pour the sauce over and let everything simmer for about 2 minutes.
  7. Add the cooked noodles to the pan, tossing everything together to combine. Serve immediately.

Notes

  • For a spicier version, add red pepper flakes or sriracha to the sauce.
  • If you don’t have lo mein noodles, you can substitute spaghetti or rice noodles.
  • Store leftovers in an airtight container in the fridge for up to 4-5 days.
  • For a vegetarian version, replace the chicken with tofu or just load up on extra veggies.
