Description

Ingredients

  • 2 slices sourdough bread
  • 1 tablespoon olive oil
  • 1/4 avocado, sliced
  • 2 ounces smoked chicken breast, sliced
  • 3 Peppadew peppers, sliced
  • 1 tablespoon fresh chopped cilantro
  • 1 slice Chao creamy original dairy-free cheese (optional)
  • 12 tablespoons chipotle sauce
  • For the chipotle sauce: 1 tablespoon chipotle adobo sauce, 1/2 cup mayonnaise, 1 tablespoon lemon juice, 1 clove garlic (minced), 1/4 teaspoon coarse salt

Instructions

  1. In a small bowl, mix together the chipotle sauce ingredients: mayonnaise, chipotle adobo sauce, minced garlic, and lemon juice. Stir until smooth and adjust seasoning with salt to taste.
  2. Slice the avocado, chicken, and Peppadew peppers. Have all ingredients prepared and ready to assemble.
  3. Heat a skillet over medium-high heat. Brush olive oil onto the outside of the sourdough bread slices and place them in the skillet to toast.
  4. Once the bread is golden and crispy, spread chipotle mayo on the inside of each slice. Layer the cheese, smoked chicken, avocado, Peppadew peppers, and cilantro on one slice of bread.
  5. Place the second slice of bread on top and continue to toast the sandwich until the cheese is melted and the bread is golden brown on both sides.
  6. Remove from the skillet, slice the sandwich in half, and serve immediately.

  • If you prefer a dairy-free version, skip the cheese or use a dairy-free alternative like Chao cheese.
  • To make the sandwich spicier, add more chipotle adobo sauce or jalapeños.
