Instructions

  1. Preheat your oven to 400°F (205°C). If you’re concerned your oven runs hot, preheat it to 385°F (195°C).
  2. Cream together the cold, cubed butter, brown sugar, and granulated sugar for about 4 minutes until light and fluffy.
  3. Add the eggs and vanilla extract, then mix for 1 minute longer, scraping down the sides of the bowl halfway through.
  4. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Slowly fold the dry ingredients into the wet mixture, being careful not to overmix.
  5. Fold in the chocolate chips and chunks.
  6. If time allows, wrap the dough in plastic and refrigerate for 24 hours to enhance flavor and texture. If short on time, proceed directly to the next step.
  7. Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, ensuring at least 2 inches between each cookie.
  8. Bake for 8-11 minutes or until the edges are golden brown and the centers remain soft. Remove from the oven and let the cookies sit on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

  • For softer cookies, chill the dough for at least 30 minutes.
  • Use light-colored baking sheets to prevent the cookies from browning too quickly.
  • Don’t overbake the cookies; they will continue to cook on the hot baking sheet after you remove them from the oven.
