- Add the eggs and vanilla extract, then mix for 1 minute longer, scraping down the sides of the bowl halfway through.
- In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Slowly fold the dry ingredients into the wet mixture, being careful not to overmix.
- Fold in the chocolate chips and chunks.
- If time allows, wrap the dough in plastic and refrigerate for 24 hours to enhance flavor and texture. If short on time, proceed directly to the next step.
- Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, ensuring at least 2 inches between each cookie.
- Bake for 8-11 minutes or until the edges are golden brown and the centers remain soft. Remove from the oven and let the cookies sit on the baking sheet for 5 minutes before transferring them to a cooling rack.
