Description

These Chocolate Covered Raspberries are an easy no-bake dessert featuring fresh, juicy raspberries coated in rich dark chocolate and finished with a delicate white chocolate drizzle. Perfect for Valentine’s Day, holidays, parties, edible gifts, or a quick sweet treat, they come together in minutes with just a few simple ingredients.

Ingredients

Scale
  • 12 ounces fresh raspberries, washed and completely dried
  • 8 ounces dark dipping chocolate or dark chocolate melting wafers, chopped
  • 2 ounces white chocolate, melted for drizzling

Instructions

  1. Wash the raspberries gently under cool water and pat them completely dry. Let them air dry if needed, as any moisture will prevent the chocolate from sticking.
  2. Line a baking tray or large plate with parchment paper.
  3. Melt the dark chocolate using a double boiler or microwave in 20 to 30-second intervals, stirring after each until smooth.
  4. Transfer the melted chocolate to a narrow bowl for easier dipping.
  5. Using a fork, dip individual raspberries or groups of three raspberries into the melted chocolate, coating them evenly.
  6. Allow excess chocolate to drip off before carefully placing the coated raspberries onto the prepared parchment paper.
  7. Melt the white chocolate using the same method and transfer it to a piping bag or small zip-top bag with the corner snipped.
  8. Drizzle the white chocolate over the chocolate-covered raspberries.
  9. Allow the chocolate to harden completely at room temperature or refrigerate for about 10 minutes before serving.
  10. Serve immediately or store in the refrigerator until ready to enjoy.

Notes

  • Dry the raspberries completely before dipping to ensure the chocolate adheres properly.
  • Use high-quality melting chocolate for the smoothest coating.
  • Handle raspberries gently to avoid crushing them.
  • Store the finished raspberries in a single layer inside an airtight container.
  • Best enjoyed within 24 hours, but they can be refrigerated for up to 3 days.
  • Freeze in an airtight container for up to 2 months if desired.
