  1. Prepare the Strawberries: Wash and dry the strawberries thoroughly, then remove the stems. Dice them into small pieces to ensure even mixing with the yogurt.
  2. Mix the Yogurt: In a large bowl, combine the diced strawberries with Greek yogurt and vanilla extract. Stir until the strawberries are evenly coated, ensuring each bite has a balance of fruit and creamy yogurt.
  3. Form the Clusters: Line a baking sheet with parchment paper. Using a spoon, scoop small clusters of the strawberry-yogurt mixture onto the sheet, leaving space between them to prevent sticking.
  4. Freeze Until Firm: Place the baking sheet in the freezer for about 30-45 minutes. The clusters should be solid but not rock hard to make dipping easier.
  5. Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until the chocolate is smooth and glossy. Allow it to cool for a minute to prevent melting the yogurt upon dipping.
  6. Coat the Clusters: Remove the frozen clusters from the freezer. Using a spoon or fork, dip each cluster into the melted chocolate, ensuring even coverage. Let excess chocolate drip off before placing it back onto the parchment-lined sheet.
