Instructions
- Preheat and Prep the Pan: Set your oven to 350°F and grease a standard 9×5-inch loaf pan with cooking spray or butter to prevent sticking.
- Mix the Wet Ingredients: In a large mixing bowl, whisk together the canola oil, softened butter, and sugar until smooth and creamy. Add in the eggs and vanilla extract and continue to mix until well blended.
- Incorporate the Dry Ingredients: Add the flour, baking powder, salt, and buttermilk to the wet mixture and gently stir until a smooth, thick batter forms. Avoid overmixing to keep the texture light.
- Create the Cinnamon Batter: Transfer about ½ cup of the batter into a separate bowl. Stir in the ground cinnamon and molasses until fully combined. This will create the flavorful swirl.
- Layer and Swirl the Batters: Pour half of the plain batter into the loaf pan. Drop spoonfuls of the cinnamon batter over the top. Pour the remaining plain batter on top, followed by the rest of the cinnamon batter. Use a butter knife to gently swirl the batters together, creating a marbled effect.
- Bake the Bread: Place the loaf in the preheated oven and bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean. The loaf should be golden brown and set.
