Description

Ingredients

  • ¼ cup Oil (Canola)
  • ¼ cup Butter (unsalted and softened)
  • 1 cup Sugar
  • 1 tsp Vanilla Extract
  • 2 large Eggs (room temperature)
  • 1 ½ cups All-Purpose Flour
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • ½ cup Buttermilk
  • ½ tsp Molasses
  • ½ tsp Cinnamon
  • Topping: ½ cup Butter (melted, unsalted)
  • ¼ cup Light Brown Sugar (packed)
  • ¼ cup Granulated Sugar
  • ½ tsp Cinnamon

Instructions

  1. Preheat the oven to 350°F and spray a loaf pan with non-stick spray.
  2. In a large bowl, combine butter, oil, and sugar. Mix until well combined.
  3. Add eggs and vanilla extract, and beat until smooth.
  4. Alternate adding dry ingredients and buttermilk to the wet mixture, mixing after each addition.
  5. Scrape down the sides of the bowl and ensure the batter is smooth.
  6. In a separate bowl, mix the cinnamon and molasses with a portion of the batter.
  7. Spoon half of the plain batter into the loaf pan, followed by the molasses-cinnamon mixture, then spread the remaining batter on top.
  8. Top with the remaining molasses mixture and swirl with a knife to create a marbled effect.
  9. Bake for 40-45 minutes or until a toothpick comes out clean.
  10. Allow the loaf to cool slightly before removing it from the pan.
  11. Dip the loaf into melted butter and coat with cinnamon sugar topping.
  12. Serve warm or allow it to cool completely.

Notes

  • To make buttermilk, add ½ tsp white vinegar to ½ cup whole milk and stir to thicken.
  • Store the bread in an airtight container for up to 4 days at room temperature or 5-6 days in the refrigerator.
  • If you prefer, you can use a sugar substitute in the topping, but be mindful of texture changes.
  • This bread can also be frozen for long-term storage.
