- 4 cups day-old bread, cubed
- 4 large eggs
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 2 tsp vanilla extract
- 1 tsp ground cinnamon

- 2 tbsp melted butter (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
- In a large bowl, whisk together eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon until well combined.
- Add the cubed bread and gently fold it into the custard mixture. Let it soak for 5 minutes.
- Spoon the mixture evenly into the muffin cups, pressing down gently to compact.
- Bake for 25–30 minutes or until golden and set in the center.
- Mix the topping sugar and cinnamon in a small bowl while muffins bake.
- After baking, brush each muffin with melted butter and sprinkle with the cinnamon sugar topping.
- Let cool slightly and serve warm.
Notes
- Use day-old bread for best texture—fresh bread can become too soggy.
- You can prep the mixture the night before and bake in the morning.
- Optional add-ins include chocolate chips, chopped nuts, or dried fruit.
- Muffins can be stored in the fridge for 3 days or frozen for 3 months.
- To reheat, use oven, microwave, or stovetop with lid for best results.
