Description

Cinnamon Sugar French Toast Muffins are a beginner-friendly, sweet breakfast treat made with day-old bread and warm spices, baked to golden perfection.

Ingredients

Scale
  • 4 cups day-old bread, cubed
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 cup granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)
  • 2 tbsp melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large bowl, whisk together eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon until well combined.
  3. Add the cubed bread and gently fold it into the custard mixture. Let it soak for 5 minutes.
  4. Spoon the mixture evenly into the muffin cups, pressing down gently to compact.
  5. Bake for 25–30 minutes or until golden and set in the center.
  6. Mix the topping sugar and cinnamon in a small bowl while muffins bake.
  7. After baking, brush each muffin with melted butter and sprinkle with the cinnamon sugar topping.
  8. Let cool slightly and serve warm.

Notes

  • Use day-old bread for best texture—fresh bread can become too soggy.
  • You can prep the mixture the night before and bake in the morning.
  • Optional add-ins include chocolate chips, chopped nuts, or dried fruit.
  • Muffins can be stored in the fridge for 3 days or frozen for 3 months.
  • To reheat, use oven, microwave, or stovetop with lid for best results.
