Description

This Cinnamon Sugar Nectarine Cobbler is a simple and delicious summer dessert, combining the juicy sweetness of nectarines with a buttery, cinnamon-sugar topping. It’s perfect for any occasion, offering a cake-like texture with a slightly crispy edge, all while being incredibly easy to prepare.

  • 1/2 cup salted butter (cut into 4 pieces)
  • 5 nectarines (sliced into 1/2-inch thick slices)
  • 1 cup self-rising flour (or 1 cup all-purpose flour + 2 teaspoons baking powder)
  • 1 cup granulated sugar
  • 3/4 cup whole or 2% milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar (for cinnamon-sugar)
  • 1/4 teaspoon ground cinnamon (for cinnamon-sugar)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the butter in a 9×9-inch baking dish and place it in the oven to melt (about 8 minutes).
  3. Slice the nectarines into 1/2-inch thick slices and discard the pits.
  4. In a bowl, mix the self-rising flour, sugar, milk, and vanilla extract until smooth.
  5. Arrange the sliced nectarines on top of the melted butter in the baking dish. Pour the batter over the fruit. Do not stir.
  6. In a small bowl, combine the 2 tablespoons of sugar and 1/4 teaspoon of cinnamon. Sprinkle this mixture over the cobbler.
  7. Bake the cobbler for 40 minutes or until golden brown and bubbly at the edges.
  8. Allow the cobbler to cool for a few minutes before serving. Enjoy with a scoop of vanilla ice cream!

Notes

  • Do not stir the batter after pouring it over the fruit to maintain the perfect texture.
  • You can substitute peaches or other stone fruits like plums or apricots for nectarines.
  • If using frozen nectarines, make sure to drain any excess moisture before using them in the recipe.
  • This recipe can also be made with canned nectarines or peaches, just drain the fruit well.
  • For a gluten-free option, substitute self-rising flour with a gluten-free flour blend.
