Description

Ingredients

  • 1 tsp baking powder

  • 1 tbsp ground cinnamon

  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups zucchini, grated and moisture squeezed out
  • 1/4 cup cinnamon-sugar mixture (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. Grate the zucchini and squeeze out any excess moisture using a paper towel or clean cloth.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, and cinnamon. Set aside.
  4. In another bowl, whisk together the eggs and both sugars until smooth. Add melted butter, vanilla extract, and grated zucchini. Mix until combined.
  5. Gradually fold in the dry ingredients until just combined, being careful not to overmix.
  6. For the cinnamon swirl, mix cinnamon and sugar in a small bowl. Spoon half the batter into the pan, sprinkle with cinnamon-sugar, and then add the remaining batter. Swirl gently with a knife.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Check around 45 minutes to prevent overbaking.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Ensure to squeeze out excess moisture from the zucchini to keep the bread from being too soggy.
  • If you prefer, you can substitute whole wheat flour for a healthier option.
  • Check doneness by inserting a toothpick into the center – it should come out clean.
