Ingredients
Scale
- ½ cup butter, softened
- 1 cup sugar
- 2 eggs, beaten
- 3 medium-large overripe bananas, mashed
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tbsp vanilla extract
- ¾ cup semi-sweet chocolate chips or nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and lightly flour a loaf pan.
- Cream together softened butter and sugar for about 2 minutes until light and fluffy.
- Add the beaten eggs and mashed bananas, and mix well.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- Stir in vanilla extract until evenly distributed in the batter.
- If desired, fold in chocolate chips or nuts after tossing them in 1 tablespoon of flour.
- Pour the batter into the prepared loaf pan.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out almost clean.
- Let the banana bread cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
Notes
- Use overripe bananas for the best flavor and moisture.
- Don’t overmix the batter to avoid dense bread.
- Toss chocolate chips or nuts in flour to help them distribute evenly in the batter.
- Check doneness by inserting a toothpick; it should come out with just a few crumbs.
- Allow the bread to cool before slicing to preserve its moisture.
