Ingredients

  • 1 cup sugar
  • 2 eggs, beaten
  • 3 medium-large overripe bananas, mashed

  • 1 tsp baking soda
  • ½ tsp salt

  • ¾ cup semi-sweet chocolate chips or nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and lightly flour a loaf pan.
  2. Cream together softened butter and sugar for about 2 minutes until light and fluffy.
  3. Add the beaten eggs and mashed bananas, and mix well.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  6. Stir in vanilla extract until evenly distributed in the batter.
  7. If desired, fold in chocolate chips or nuts after tossing them in 1 tablespoon of flour.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out almost clean.
  10. Let the banana bread cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
