- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- ½ cup sour cream
- 1 cup powdered sugar (for glaze)
- 1 tablespoon lemon juice (for glaze)
- 1–2 tablespoons heavy cream or milk (for glaze)
Instructions
- Preheat the oven to 350°F and grease or line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the sugar and eggs on medium speed until light and combined.
- Add the melted butter and vegetable oil, mixing until smooth.
- Mix in vanilla extract, lemon extract, lemon zest, and lemon juice until incorporated.
- Add sour cream and mix until fully combined.
- Fold in the dry ingredients in thirds, mixing gently until just combined to avoid overmixing.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 30 minutes, then remove and let it cool completely on a wire rack.
- Prepare the glaze by whisking powdered sugar, lemon juice, and cream or milk until smooth and pourable.
- Drizzle glaze over the cooled loaf and let it set before serving.
Notes
- If the top browns too quickly while baking, cover loosely with foil.
- Use fresh lemon juice and zest for best flavor.
- Substitute sour cream with Greek yogurt or buttermilk if needed.
- The loaf can be frozen, whole or sliced, for up to 3 months.
