- 1 cup cottage cheese
- ¾ cup bacon bits (cooked)
- 1 cup Colby Jack cheese, shredded
- ¼ tsp salt
- ¼ tsp black pepper
- Cooking oil spray
Instructions
- Preheat your oven to 325°F (163°C).
- In a large bowl, whisk eggs until the yolks and whites are combined. Add the cottage cheese, shredded cheese, bacon bits, salt, and pepper. Mix until everything is evenly incorporated.
- Generously grease a 12-cup muffin tin with cooking spray.
- Evenly distribute the egg mixture into each muffin cup, filling each about ¾ full.
- Place the muffin tin on the top rack of the oven and a pan of water on the lower rack to keep the egg bites moist while baking.
- Bake for 23–25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
- Remove the muffin tin from the oven and let the egg bites cool for 2-3 minutes. Carefully remove them from the muffin tin and serve warm.
Notes
- Grease the muffin tin generously to ensure easy removal of the egg bites.
- If you prefer a vegetarian version, swap the bacon for vegetables like spinach or bell peppers.
- Store leftovers in the refrigerator for up to 4 days, or freeze them for longer storage.
- For a spicier version, add diced jalapeños or a dash of hot sauce to the egg mixture.
