Description

This easy-to-make recipe is a great alternative to the popular sous-vide egg bites, providing a similar texture but without the need for fancy equipment.

  • 7 large eggs
  • 1 cup cottage cheese
  • ¾ cup bacon bits (cooked)
  • 1 cup Colby Jack cheese, shredded
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Cooking oil spray

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large bowl, whisk eggs until the yolks and whites are combined. Add the cottage cheese, shredded cheese, bacon bits, salt, and pepper. Mix until everything is evenly incorporated.
  3. Generously grease a 12-cup muffin tin with cooking spray.
  4. Evenly distribute the egg mixture into each muffin cup, filling each about ¾ full.
  5. Place the muffin tin on the top rack of the oven and a pan of water on the lower rack to keep the egg bites moist while baking.
  6. Bake for 23–25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  7. Remove the muffin tin from the oven and let the egg bites cool for 2-3 minutes. Carefully remove them from the muffin tin and serve warm.

  • Grease the muffin tin generously to ensure easy removal of the egg bites.
  • If you prefer a vegetarian version, swap the bacon for vegetables like spinach or bell peppers.
  • Store leftovers in the refrigerator for up to 4 days, or freeze them for longer storage.
  • For a spicier version, add diced jalapeños or a dash of hot sauce to the egg mixture.
