Description

Cream Cheese Chicken Taquitos are a crispy and flavorful Mexican-inspired dish filled with a creamy, seasoned chicken mixture. These baked taquitos are a healthier alternative to fried ones and make for a great appetizer or a fun weeknight meal. With the combination of shredded chicken, cream cheese, cheddar, and a hint of cumin and salsa, they’re perfect for dipping in sour cream or guacamole.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ¼ cup salsa
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 10 small flour or corn tortillas
  • Cooking spray or olive oil for brushing

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine shredded chicken, softened cream cheese, cheddar cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper. Stir until everything is well mixed.
  3. Place about 2-3 tablespoons of the filling onto each tortilla and roll tightly. Place the rolled taquitos seam-side down on the prepared baking sheet.
  4. Lightly brush each taquito with olive oil or cooking spray.
  5. Bake in the preheated oven for 15-18 minutes or until golden and crispy.

Notes

  • Use rotisserie chicken to save time and add convenience.
  • If using corn tortillas, warm them slightly to prevent cracking.
  • For extra flavor, use a spicier salsa or add some jalapeños to the filling.
  • For meal prep, these can be assembled ahead of time and stored in the fridge for up to 24 hours before baking.
  • Freeze unbaked taquitos for up to 3 months. Bake them from frozen for about 20-25 minutes.
