Description

  • 2 large chicken breasts (boneless, skinless)
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 3/4 cup chicken broth
  • 1/2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes
  • Fresh chopped parsley (optional, for garnish)

Instructions

  1. Microwave the cream cheese in small cubes until softened, then set aside.
  2. Cut the chicken breasts in half lengthwise to create thinner cutlets. Season with garlic powder, salt, and pepper.
  3. Heat butter and olive oil in a skillet over medium-high heat. Cook the chicken for 5-6 minutes per side until golden and cooked through. Remove the chicken and set it aside.
  4. Reduce heat to medium and sauté onions for 5-7 minutes until softened. Add minced garlic and cook for 30 seconds.
  5. Pour in chicken broth, then add cream cheese, Italian seasoning, and crushed red pepper flakes. Stir until smooth.
  6. Return the chicken to the skillet, allowing it to warm through and soak in the creamy sauce. Adjust the sauce with additional broth if needed.
  7. Season with salt and pepper to taste, garnish with parsley, and serve immediately.

Notes

  • If the sauce is too thick, add more chicken broth or water until it reaches the desired consistency.
  • Ensure the chicken reaches an internal temperature of 165°F to ensure it’s fully cooked.
  • Leftovers can be stored in the fridge for 3-4 days and should be reheated slowly over low heat.
  • For extra heat, increase the amount of red pepper flakes or add cayenne pepper.
