Creamy Boursin Chicken is a flavorful and easy-to-make dish that features tender pan-seared chicken covered in a creamy Boursin cheese sauce.   • 2 large boneless, skinless chicken breasts (halved horizontally)
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 4 oz. baby spinach leaves (optional)
  • 3/4 cup chicken stock
  • 1 (5 oz) pack Boursin Garlic & Herbs cheese, at room temperature
  • Salt and pepper to taste

Instructions

  1. Slice each chicken breast horizontally to make 4 thinner pieces.
  2. Combine flour, garlic powder, onion powder, salt, and pepper in a shallow dish. Dredge each chicken piece in the flour mixture, shaking off excess.
  3. Heat olive oil over medium-high heat in a large pan. Sear the chicken for 3-4 minutes on each side until golden brown and cooked through. Set aside.
  4. In the same pan, add spinach and sauté for 30 seconds until it begins to wilt. Set aside with the chicken.
  5. Add diced onion to the pan and sauté for 2-3 minutes until softened. Add more oil if needed.
  6. Pour in the chicken stock and stir in the Boursin cheese until smooth. Let the sauce simmer for a few minutes until it thickens.
  7. Return the chicken and spinach to the pan, simmering for an additional 30 seconds to combine the flavors and thicken the sauce. Adjust the sauce consistency with more chicken stock if needed.

Notes

  • Feel free to substitute chicken breasts with boneless chicken thighs for a juicier result.
  • If you prefer a spicier dish, add red pepper flakes or jalapeños to the sauce.
  • You can omit spinach if you don’t like it, or replace it with kale or Swiss chard.
  • The Boursin cheese can be replaced with other flavors like Sun-Dried Tomato & Basil for a different twist.
  • This dish can be made ahead and stored for up to 3-4 days in the refrigerator.
