Description

Creamy Chicken Bacon Ranch Pasta is the ultimate comfort meal, combining smoky bacon, tender chicken, and a rich, cheesy ranch sauce with perfectly cooked pasta. This dish is quick, satisfying, and beginner-friendly, making it ideal for busy weeknights or cozy dinners.

Ingredients

Scale
  • 2 small boneless, skinless chicken breasts
  • 6 strips thick-cut bacon
  • 2 cups uncooked rotini or penne pasta
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 2 tablespoons flour
  • 2 cups half and half
  • 2 tablespoons dry ranch dressing seasoning mix
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Bacon: Heat a large skillet over medium-low heat and add the bacon strips. Cook until crispy, allowing the fat to render slowly for maximum flavor. Transfer the bacon to a paper towel-lined plate and set aside. Leave about a tablespoon of bacon grease in the pan for added richness.
  2. Prepare the Chicken: Slice the chicken breasts into thin strips and season with salt, pepper, onion powder, and Italian seasoning. Increase the heat to medium-high and cook the chicken in the reserved bacon grease until golden brown on the outside and fully cooked inside. Remove from the pan and set aside to rest before dicing into bite-sized pieces.
  3. Boil the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a small amount of pasta water to adjust the sauce’s consistency if needed.
  4. Make the Sauce: In the same skillet, melt the butter over medium heat, then add the minced garlic. Cook for about 30 seconds until fragrant. Stir in the flour and cook for another minute to form a smooth roux. Slowly pour in the half and half, whisking constantly to prevent lumps. Once the mixture thickens, stir in the ranch seasoning and shredded cheddar cheese, continuing to mix until the sauce is creamy and smooth.
  5. Combine Everything: Add the cooked pasta to the skillet, tossing it in the sauce to coat each piece evenly. Stir in the diced chicken and crumble the crispy bacon over the top. Gently mix everything together, ensuring all flavors are well combined. Serve warm and enjoy immediately.

Notes

  1. For an extra creamy sauce, use a mix of cheddar and mozzarella cheese.
  2. If the sauce thickens too much, add a splash of milk or reserved pasta water while stirring.
  3. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a bit of milk to maintain creaminess.
  4. Add vegetables like spinach, peas, or mushrooms to boost nutrition.
