Description

Creamy Ranch Chicken is an easy and delicious skillet meal featuring tender chicken breasts cooked in a rich, creamy Ranch seasoning sauce. This comfort food is perfect for busy weeknights and pairs wonderfully with mashed potatoes, rice, or vegetables.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons butter, melted
  • 12 tablespoons olive oil
  • 10.5 oz. can of cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream, at room temperature
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Slice the chicken breasts into 2-3 thinner slices, about ½ inch thick. Season both sides with Italian seasoning, salt, and pepper.
  2. Brush one side of each piece with melted butter. Heat olive oil in a large pan over medium-high heat.
  3. Sear the chicken in batches for 4-5 minutes per side until golden brown. Remove from the pan and set aside.
  4. In the same pan, add the cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning mix. Stir and let it bubble gently for about 5 minutes.
  5. Add the chicken back to the pan and spoon the sauce over it. Cover partially and simmer for 10 minutes until the chicken is fully cooked.
  6. Serve over mashed potatoes, baked potatoes, or vegetables with extra sauce spooned over the top.

Notes

  • Be sure to use Ranch seasoning mix, not Ranch dip mix, as they are different in flavor and texture.
  • For a richer flavor, sprinkle crispy bacon and shredded cheese over the chicken before serving.
  • This recipe can be made with chicken thighs instead of chicken breasts for a more flavorful and tender option.
  • If using smaller chicken breasts, consider using 3-4 pieces instead of 2 large ones.
  • Frozen vegetables can be added directly to the sauce during cooking for added convenience.
