Description

Ingredients

  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 375°F (or 400°F for darker, crispier chickpeas) and line a baking sheet with parchment paper.
  2. Rinse and drain the chickpeas thoroughly, then pat them dry using paper towels to remove as much moisture as possible.
  3. In a large bowl, toss the chickpeas with olive oil, cumin, smoked paprika, salt, pepper, and cayenne until evenly coated.
  4. Spread the seasoned chickpeas in a single layer on the prepared baking sheet without crowding them.
  5. Roast for 30 minutes, then give the pan a shake or stir the chickpeas for even cooking.
  6. Continue roasting for another 25–30 minutes until the chickpeas are golden, dry, and crisp.
  7. Remove from the oven and let them cool completely on the tray before storing to maintain crunch.
