  • 1 lbs green beans
  • 2 tbsp avocado oil (or olive oil)
  • 6 large garlic cloves, minced
  • ¼ cup grated parmesan cheese
  • ¼ tsp salt (or to taste)
  • ½ tsp black pepper
  • Lemon (optional, for squeezing over the top)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking pan with parchment paper.
  2. Trim both ends of the green beans and place them in a large bowl.
  3. Add the avocado oil, minced garlic, grated parmesan, salt, and black pepper to the bowl. Toss until the green beans are evenly coated.
  4. Spread the green beans out in a single layer on the prepared baking pan. It’s okay if some beans overlap.
  5. Roast the green beans for 15-20 minutes, checking around 10 minutes to ensure they don’t overcook.
  6. Once they are golden and crispy, remove them from the oven. Optionally, squeeze a little lemon juice over the top and serve immediately.

Notes

  • If using frozen green beans, no thawing is needed. Just toss them with the seasonings and roast as instructed.
  • For a spicier version, add red pepper flakes or cayenne pepper.
  • If fresh parmesan is unavailable, Pecorino Romano or Asiago make great substitutes.
  • Make sure to check the green beans at 10-12 minutes to avoid over-roasting, as ovens vary.
