- 3 boneless skinless chicken breasts
- 1 can (15 oz) tomato sauce
- 1 bunch cilantro, chopped
- 1 lime, juiced
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1/2 teaspoon garlic salt
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Place the chicken breasts in the bottom of the slow cooker.
- Sprinkle the chili powder, cumin, garlic salt, salt, and pepper over the chicken. Add the chopped cilantro and lime juice on top.
- Pour the tomato sauce over everything without stirring.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender and shreds easily.
- Shred the chicken using two forks and stir it into the sauce before serving.
Notes
- You can use frozen chicken, but extend the cooking time accordingly.
- Substitute parsley or green onions if you don’t like cilantro.
- Add red pepper flakes or jalapeños to increase heat.
- Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
