Description

This slow cooker cilantro lime chicken is a simple, beginner-friendly recipe packed with zesty lime, fresh cilantro, and warm spices. Perfect for quick and healthy meals, it’s ideal for busy weeknights and meal prep.


Ingredients

  • 3 boneless skinless chicken breasts
  • 1 can (15 oz) tomato sauce
  • 1 bunch cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Sprinkle the chili powder, cumin, garlic salt, salt, and pepper over the chicken. Add the chopped cilantro and lime juice on top.
  3. Pour the tomato sauce over everything without stirring.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender and shreds easily.
  5. Shred the chicken using two forks and stir it into the sauce before serving.

Notes

  • You can use frozen chicken, but extend the cooking time accordingly.
  • Substitute parsley or green onions if you don’t like cilantro.
  • Add red pepper flakes or jalapeños to increase heat.
  • Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
  • Use a hand mixer to shred the chicken faster and easier.
