Description

Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons white sugar
  • 1/8 teaspoon salt
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 egg
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
  2. Add milk, melted butter, egg, and vanilla extract to the bowl and whisk until just combined. Do not overmix; some small lumps are okay.
  3. Heat a nonstick skillet over medium heat. When hot, pour about 1/3 cup of batter into the center of the pan.
  4. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes, until golden brown on both sides.
  5. Transfer cooked pancakes to a plate and cover with a towel to keep warm. Repeat with remaining batter.
  6. Serve warm with butter, syrup, and your favorite toppings.

Notes

  • Do not overmix the batter to keep pancakes fluffy.
  • If using a nonstick skillet, additional oil or butter is often unnecessary.
  • You can store leftover pancakes in the fridge for 2–3 days or freeze them for up to 60 days.
  • To reheat, use a skillet or microwave. For frozen pancakes, bake at 325°F for 10–12 minutes.
