Description

Ingredients

  • 1 unbaked pie crust
  • 1 cup lemon curd
  • Powdered sugar (optional)
  • Easter or spring sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Spray mini muffin pans with cooking spray that contains flour and set aside.
  2. Let the pie crust come to room temperature. Roll it out and use a flower-shaped cookie cutter to cut out flower shapes.
  3. Continue cutting until you have 12-14 flower-shaped pieces. Re-roll the dough scraps to make more shapes.
  4. Press the dough flowers into the mini muffin tins, folding the petals around the edges of the tin.
  5. Prick the bottoms of the dough pieces with a fork to prevent puffing.
  6. Bake the mini tarts for 8-10 minutes, or until the edges are golden brown.
  7. Let the tarts cool before carefully removing them from the pans.
  8. Fill each tart shell with lemon curd and top with sprinkles, if desired. Optionally, dust with powdered sugar before serving.
