Scale
- 2 1/2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk
- 2 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3 cups powdered sugar (for frosting)
- 1 cup unsalted butter (for frosting)
- 2–3 tablespoons heavy cream or milk (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- 1 cup shredded chocolate or toasted coconut for nest decoration
- 1/2 cup chocolate sprinkles or chocolate shavings
- 1 cup candy-coated chocolate eggs for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition to maintain a smooth batter.
- Stir in the vanilla extract for flavor.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing gently until a smooth batter forms.
- Divide the batter evenly between prepared cake pans and smooth the tops.
- Bake for 25–35 minutes or until a toothpick inserted in the center comes out clean.
- Remove cakes from the oven and allow them to cool completely on a wire rack.
- Prepare the frosting by beating butter, powdered sugar, vanilla extract, and cream until smooth and fluffy.
- Place the first cake layer on a serving plate and spread frosting evenly over the top.
- Add the second cake layer and frost the top and sides of the cake.
- Sprinkle shredded chocolate or toasted coconut in a circular shape on top to create a nest.
- Gently shape the nest with a spoon and place candy chocolate eggs in the center.
- Slice and serve the Easter Nest Cake for a festive holiday dessert.
Notes
- Ensure all ingredients are at room temperature for a smoother batter.
- Avoid overmixing the cake batter to maintain a light and fluffy texture.
- Toasted coconut can be used instead of chocolate for a natural nest appearance.
- The cake layers can be baked one day ahead and stored tightly wrapped.
- Add candy eggs shortly before serving to keep them colorful and fresh.
