- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 8 ounces sliced mushrooms
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 8 ounces angel hair pasta
- Fresh parsley, chopped, for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 4–5 minutes per side until golden brown. Remove and set aside.
- Add mushrooms and minced garlic to the same skillet. Sauté for about 5 minutes until the mushrooms are browned and garlic is fragrant.
- Pour in chicken broth, scraping the skillet to deglaze. Simmer for 2–3 minutes.
- Stir in heavy cream, Parmesan, basil, oregano, and red pepper flakes. Let the sauce simmer for another 2–3 minutes until slightly thickened.
- Return the chicken to the skillet, spoon sauce over, cover, and simmer for 10–12 minutes until chicken reaches 165°F.
- Meanwhile, cook angel hair pasta according to package instructions. Drain and set aside.
- To serve, plate pasta, top with a chicken breast, and pour sauce over. Garnish with chopped parsley.
