Instructions

  1. Preheat the Oven: Set your oven to 420°F (220°C) and lightly grease a sheet pan or baking dish to prevent the chicken from sticking.
  2. Prepare the Chicken: Cut the chicken breasts into 1-inch cubes. Freezing the chicken for about 30 minutes beforehand makes slicing easier and less messy.
  3. Make the Seasoning Mix: In a small bowl, combine the salt, pepper, paprika, cayenne (if using), garlic powder, onion powder, Italian seasoning, and instant chicken stock.
  4. Season the Chicken: Place the cubed chicken in your prepared baking dish. Drizzle with olive oil and toss to coat. Sprinkle the seasoning mix evenly over the chicken and toss again to distribute the flavors thoroughly.
  5. Add the Butter: Dot the seasoned chicken with small cubes of butter. This will melt during baking, creating a rich and savory sauce.
