- 2 cups cold cooked Jasmine rice (or long-grain white rice)
- 1 green onion, finely chopped
- 2.5 tablespoons regular soy sauce (or light soy sauce)
- 1/2 tablespoon toasted sesame oil
- 4 large eggs, beaten
- 2 tablespoons vegetable oil (or neutral oil like canola or avocado oil)
Instructions
- Heat vegetable oil in a large pan or wok. If using a wok, let the oil smoke slightly for a smoky flavor.
- Pour in the beaten eggs and quickly stir-fry until they take shape but are still moist.
- Add the cold rice to the pan and break up any clumps with your hands.
- Push everything to one side of the pan, add more oil, and toss in the chopped green onions. Stir them into the rice and eggs.
- Pour soy sauce and sesame oil along the edges of the pan, allowing them to sizzle and toast. Toss everything to evenly coat the rice.
- Remove from heat and serve hot. Enjoy immediately!
Notes
- For best results, use day-old rice for fluffy fried rice.
- If using fresh rice, cool it on a baking sheet and freeze it for 45–60 minutes before cooking.
- Feel free to add vegetables like peas or carrots for extra flavor and nutrition.
- For a smoky flavor, use a wok if possible.
