Description

Garlic Butter Shrimp Scampi is a quick and flavorful seafood dish featuring juicy shrimp sautéed in a buttery, garlicky sauce with a touch of white wine and lemon. This easy recipe is perfect for weeknight dinners and can be served over pasta, rice, or vegetables.

  • 2 tablespoons olive oil
  • 4 tablespoons butter, divided
  • 45 large cloves garlic, minced (or 1 ½ tablespoons pre-minced garlic)
  • 1 ¼ pounds large shrimp, peeled and deveined, tails on or off
  • Salt, to taste
  • Cracked black pepper, to taste
  • ¼ cup dry white wine or chicken broth
  • ½ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons lemon juice
  • ¼ cup fresh parsley, chopped

Instructions

  1. Heat the oil and butter: In a large skillet over medium heat, add the olive oil and half of the butter. Allow the butter to melt, then stir in the garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  2. Cook the shrimp: Add the shrimp in a single layer and season with salt and black pepper. Let them cook for 1-2 minutes on one side until they just begin to turn pink, then flip them over to cook for another minute.
  3. Deglaze the pan: Pour in the white wine (or chicken broth) and add the red pepper flakes if using. Bring the mixture to a simmer and allow it to cook for about 1-2 minutes until the liquid reduces slightly.
  4. Finish with butter and lemon: Stir in the remaining butter, letting it melt into the sauce. Squeeze in the lemon juice and sprinkle the fresh parsley over the top. Stir everything together and remove from heat immediately.
  5. Serve immediately: Enjoy your shrimp scampi over pasta, rice, or with a side of crusty bread to soak up the delicious garlic butter sauce.

Notes

  • For extra flavor, use shrimp with the shells on and remove them just before serving.
  • If the sauce thickens too much, add a splash of pasta water or broth to loosen it up.
  • For a low-carb option, serve over zucchini noodles or cauliflower rice.
  • Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently over low heat to prevent overcooking the shrimp.
