Description

Ingredients

  • 300g softened goat cheese
  • 1/2 cup fig jam
  • 1/4 cup chopped pecans
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 23 sprigs of thyme (leaves removed)
  • 1 tbsp olive oil
  • Crostini or crackers for serving

Instructions

  1. Spread the softened goat cheese in a shallow dish or plate. Drizzle with olive oil.
  2. In a small saucepan, whisk together honey, fig jam, and balsamic vinegar over medium heat. Heat for about 5 minutes, stirring occasionally.
  3. Remove the pan from the heat and let it cool for about 5 minutes.
  4. Drizzle the cooled fig jam mixture over the goat cheese.
  5. Sprinkle the chopped pecans and fresh thyme leaves over the top.
  6. Finish with a pinch of sea salt, then serve with crostini or crackers.

Notes

  • Feel free to swap pecans with walnuts for a different flavor.
  • Make the fig jam topping ahead of time and store it in the fridge until ready to serve.
  • If you don’t have fig jam, apricot or cranberry jam can be used as a substitute.
  • For a gluten-free option, serve with gluten-free crackers or fresh vegetables.
