Ingredients
Scale
- 1 fresh baguette: sliced for the base and toasted for crunch
- 4 oz soft goat cheese: provides a creamy, tangy spread
- 2–3 heirloom tomatoes: diced, juicy and flavorful
- 1 garlic clove: rubbed on toast for aromatic depth
- 2 tbsp extra virgin olive oil: adds richness and binds flavors
- Fresh basil leaves: torn for herbal freshness
- Salt: enhances the natural flavors
- Black pepper: adds mild heat and balance
Instructions
- Preheat oven to 400°F (200°C). Slice the baguette into ½-inch pieces and place on a baking sheet.
- Drizzle with olive oil and toast for 5-7 minutes until golden. Remove and rub each slice with a garlic clove.
- Dice heirloom tomatoes and place in a bowl. Drizzle with olive oil, season with salt and pepper, and mix. Let sit for 5-10 minutes.
- Spread goat cheese onto each toasted bread slice while still slightly warm.
- Top each slice with a spoonful of the tomato mixture.
- Tear and sprinkle fresh basil leaves on top.
- Drizzle with a bit more olive oil and serve immediately.
Notes
- Use room temperature goat cheese for easier spreading.
- Drain excess tomato juice to prevent soggy bread.
- Assemble just before serving for best texture.
- Try adding a drizzle of balsamic glaze or toasted nuts for variation.
