Description

This Goat Cheese Bruschetta Recipe is a fresh, easy-to-make appetizer featuring creamy goat cheese, juicy heirloom tomatoes, and fragrant basil on toasted baguette slices. Perfect for summer entertaining, light lunches, or as a gourmet snack, it brings together Mediterranean flavors in under 20 minutes.

Ingredients

Scale
  • 1 fresh baguette: sliced for the base and toasted for crunch
  • 4 oz soft goat cheese: provides a creamy, tangy spread
  • 23 heirloom tomatoes: diced, juicy and flavorful
  • 1 garlic clove: rubbed on toast for aromatic depth
  • 2 tbsp extra virgin olive oil: adds richness and binds flavors
  • Fresh basil leaves: torn for herbal freshness
  • Salt: enhances the natural flavors
  • Black pepper: adds mild heat and balance

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette into ½-inch pieces and place on a baking sheet.
  2. Drizzle with olive oil and toast for 5-7 minutes until golden. Remove and rub each slice with a garlic clove.
  3. Dice heirloom tomatoes and place in a bowl. Drizzle with olive oil, season with salt and pepper, and mix. Let sit for 5-10 minutes.
  4. Spread goat cheese onto each toasted bread slice while still slightly warm.
  5. Top each slice with a spoonful of the tomato mixture.
  6. Tear and sprinkle fresh basil leaves on top.
  7. Drizzle with a bit more olive oil and serve immediately.

Notes

  • Use room temperature goat cheese for easier spreading.
  • Drain excess tomato juice to prevent soggy bread.
  • Assemble just before serving for best texture.
  • Try adding a drizzle of balsamic glaze or toasted nuts for variation.
