Instructions
- Preheat your oven to 350°F (175°C). Line a muffin pan with muffin liners and set aside.
- In a large bowl, combine the pumpkin puree, maple syrup or honey, and Greek yogurt. Beat in the oil, egg, and vanilla extract until smooth.
- In another bowl, whisk together the flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Distribute the batter evenly into the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 10 minutes, then remove them and cool completely on a wire rack.
