- 2 cups (200g) broccoli florets
- 2 tbsp olive oil
- Salt & black pepper
- 1/2 cup (120ml) Greek yogurt
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1 tbsp chopped fresh parsley
- 1/4 tsp paprika
- Cooked rice or quinoa (for serving)
Instructions
- Season the chicken breasts with salt, pepper, and 1 tbsp of olive oil. Grill the chicken over medium heat for 6-7 minutes per side until fully cooked. Once cooked, slice it thinly.
- Toss the broccoli florets with the remaining olive oil, salt, and pepper. Roast or grill the broccoli at 400°F (200°C) for 15-20 minutes, or until tender and slightly crispy.
- In a bowl, mix the Greek yogurt, minced garlic, lemon juice, parsley, and paprika. Stir until combined.
- Serve the sliced chicken and roasted broccoli over a bed of rice or quinoa. Drizzle with the creamy garlic sauce and enjoy!
