Description

Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce are a healthy, delicious, and easy-to-make meal, combining juicy grilled chicken, tender roasted broccoli, and a creamy, tangy garlic sauce. Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups (200g) broccoli florets
  • 2 tbsp olive oil
  • Salt & black pepper
  • 1/2 cup (120ml) Greek yogurt
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp paprika
  • Cooked rice or quinoa (for serving)

Instructions

  1. Season the chicken breasts with salt, pepper, and 1 tbsp of olive oil. Grill the chicken over medium heat for 6-7 minutes per side until fully cooked. Once cooked, slice it thinly.
  2. Toss the broccoli florets with the remaining olive oil, salt, and pepper. Roast or grill the broccoli at 400°F (200°C) for 15-20 minutes, or until tender and slightly crispy.
  3. In a bowl, mix the Greek yogurt, minced garlic, lemon juice, parsley, and paprika. Stir until combined.
  4. Serve the sliced chicken and roasted broccoli over a bed of rice or quinoa. Drizzle with the creamy garlic sauce and enjoy!
